Green Curry with Chicken (Gang Kiew Wan Gai)
Green Curry with Chicken is well known and popular with both Thais and foreigners. Just serve it with the rice or arrange in Spicy Papaya Salad with Rice Set is even more delicious.
Ingredient of Green Curry with Chicken (Gang Kiew Wan Gai) 
- 2 cups fresh coconut milk
- 2 Tablespoons green curry paste
- 1/2 cup chicken, sliced thinly
- 2 cups Thai eggplants, cut into quarters
- 1/2 cup pea eggplants
- 1/4 cup red bell pepper, sliced thinly
- 4-6 kaffir lime leaves, deveined and torn in half
- 1/2 cup Thai basil leaves
- 1 teaspoon fish sauce (to taste)
- 1/2 teaspoon sugar

How to Cook Green Curry with Chicken (Gang Kiew Wan Gai)
  1. Start by making fresh, homemade coconut milk as demonstrated in the video above. Crack the coconut in half using the back edge of a cleaver. Discard the coconut water and then grate the coconut meat with a traditional Thai shredder to produce fine shreds. Mix approximately equal amounts of shredded coconut meat and warm water and squeeze together. Strain the mixture so that you are left with pure coconut milk.
  2. Allow the coconut milk to sit uninterrupted for approximately 30 minutes or so to allow the milk and cream layers to separate. During this time, prepare the rest of your ingredients. Slice the eggplants into quarters and the bell peppers into thin strips. Remove the pea eggplants and Thai basil from their stems and tear the kaffir lime leaves into halves. Cut the chicken into thin bite-sized pieces.
  3. Once all of your ingredients are prepared, heat a wok to medium to medium-high heat. Pour in the coconut cream (you should have approximately 1/2 to 1 cup) and allow to heat until it "breaks" into its oil and milk layers. Add the curry paste, stir until it's incorporated into the cream, and then let fry until a sheen of oil can be seen on top of the paste, being careful not to let it burn.
  4. Add the thinly-sliced chicken pieces and coat in the curry paste mixture. Allow them to cook for 1-2 minutes, then add the remaining thinner coconut milk and bring to a gentle boil.
  5. Add the Thai eggplant and allow to cook until soft, approximately 15-20 minutes. Then add the torn kaffir lime leaves, red pepper slices, and pea eggplants and cook until just tender. Season with fish sauce and sugar to taste. The amounts of these seasonings will depend on your curry paste and personal preferences, but I like to start with 1 teaspoon of fish sauce and just a dash of sugar.
  6. Add the Thai basil, stir to incorporate, and remove from the heat. Serve with jasmine rice and enjoy!

Loy Krathong Festival

              Loy Krathong Day is one of the most popular festivals of Thailand celebrated annually on the Full-Moon Day of the Twelfth Lunar Month.  It takes place at a time when the weather is fine as the rainy season is over and there is a high water level all over the country. The word “Loy” means “to float”, and “Krathong” means lotus-shaped vessel made of banana leaves. Loy Krathong is, therefore the floating of an illuminated leaf bowl.  But nowadays some krathongs are made of coloured paper.  A krathong usually contains a candle, three joss sticks, some flowers and coins.
              The history of Loy Krathong Festival is slightly obscure.  First, it is to ask for apology from the water goddess for having used and sometimes made rivers and canals dirty.  Second, it is to offer flowers, candles and joss sticks as a tribute to the footprint of Lord Buddha on the sandy beach of the Nammatha River in India.  Third, it is to show gratitude to the Phra Mae Kong Ka or Mother of Water.  Fourth, it is to wash away the previous year’s misfortunes.



                The ceremony is believed to have originated in the time of King Ramkhamhaeng of Sukhothai, the first capital of Thailand, and to have been started by Nang Nophamas or Tao Sri Chulalak, the Brahman consort of the King.  She was the first person who introduced “Krathongcherm”, the banana leaf krathong in the form of lotus blossom on the festival night.    The festival starts in the evening when there is a full moon in the sky.  People carry their krathongs to the river and canals.  After lighting candles and joss sticks and making a wish, they gently place the krathongs on the water and let them drift away till they go out of sight.  It is believed that krathongs carry away their sins and bad luck, and happiness will come to them.  Indeed, it is the time to be joyful and happy as the sufferings are floated away.                    

                The festival includes a contest of Krathong-making, the Nophamas Queen Contest, local games and performances, entertainment programs and firework displays.  The Loy Krathong song contributes to the romantic atmosphere of this occasion.

AYUTTHAYA

WAT MAHATHAT in AYUTTHAYA
                   Wat Maha That or the “Monastery of the Great Relic” is located on the city island in the central part of Ayutthaya in Tha Wasukri sub-district. The temple is situated on the corner of the present Chikun Road and Naresuan Road. The monastery stood on the west bank of Khlong Pratu Khao Pluak, an important canal, which has been filled up somewhere in the early 20th century. In ancient times the temple was likely fully surrounded by canals and moats. The structure has been registered as a national historic site by the Fine Arts Department on 8 March 1935 and is part of the Ayutthaya World Heritage Historical Park.
                 Wat Mahathat (Temple of the Great Relics) is located almost right in the center of Ayutthaya. Apart from being the symbolic center where the Buddha's relics were enshrined, Wat Mahathat was also the residence of the Supreme Patriarch or leader of the Thai Buddhist monks. The temple is believed to be built during the 14th century A.D. (the early Ayutthaya period). The main prang collapsed during the Ayutthaya period, but was restored. It collapsed again in 1911, so only the foundation of the main prang remains at present.
                  However, it can easily be judged from the size of the base, that the prang was quite high. As in most architecture of the early period of Ayutthaya, the main prang was the most important edifice in the temple compound.

Details: The site is open daily from 08:00 a.m. to 06:30 p.m. and admission is 30 Baht.
How to get there: From Bangkok to Ayutthaya then cross King Naresuan bridge to second intersection turn right. Next from the Rama Lake you will see Wat Phra Mahathat. And take a tuk-tuk from the centre of town.
For tourists, Wat Mahathat offers the much photographed Buddha head, embedded into a tree trunk.

          “Information is a POWER.” It is truth whether information is correct or misunderstanding. Thailand Development Research Institute (TDRI) is a public policy research institute providing technical analysis to various public agencies. Its legal form is that of a private non-profit foundation. It provides technical analysis to various public agencies to help formulate policies to support long-term economic and social development in Thailand.

-What is the most influential source of information for tourist decision - making about their vacation?

-What is the effect of the INTRAMA 1990-1991 World Destination Monitor survey on the tourism industry in Thailand?

ANS         The survey in 1990-1991 by the INTRAMA World Destination Monitor, Thailand was ranked on the second place where the tourists were likely to be cheated in Asia. The tourists may feel betrayed and are more likely to go somewhere else for the similar products or services. Thailand may also get a bad reputation as a deceptive country, which means decreased revenues in the future.

-What should be done to solve the problem?

ANS     The government help support and reconstruct credibility about tourism of Thailand. 
Many campaigns were started to promote the site and local culture in Thailand such as Unseen Thailand, Amazing Thailand is a slogan to promote about tourism by The Tourism Authority of Thailand (TAT). 
To create a good image for the tourists and attract tourists back to Thailand again, and also creates jobs for local people as well as instill the tourists with a strong sense of environmental and cultural preservation.
